2.5L is ~5hr for me, even out in mid/high-30s.
But then I've done double that before in Oz too (>1L/hr) so it's going to depend on how hard people are working, how hydrated to begin with, ambient temps, personal hydro diffs. Sleep in the hotter part of the day and ride through the nights but you have to still get to the shops when they're open.
I asked him how much water he was taking and he said '2x850 + a small one, 65o, but it's probably too much'. I was a bit surprised!
He's lost a load of weight since August, looks like getting on for 2 stone (10kg). He looks pretty up for it. Kristof is how he always is.
