Thanks for the input @gabes, much appreciated. We'll be riding plenty of flint along the ridgeway as well as some bikepacking/trad climbing adventures we've got planned in Dorset and Devon.
I'm reluctant to go tubeless on these as it's Liz's main bike besides commuting and only got one wheelset for the foreseeable future so will be swapping tyres on the reg. No schwalbe is noted, am happy with my maxxis medusas for round Epping but suspect they're a bit clumpy so will look at their other offerings. I've never checked what casing I've got in the past so it's just opened up a new world.
