SEs started at the King's Arms in Tooley Street (the Roebuck was the venue for much longer and more popular, though), and Easts at the Royal Inn, which is no longer the pub it was. I expect you'll have taken all this into consideration. :) Was the first Central drinks at the John Snow or at the Lamb? I can't remember, probably because I wasn't there.
The first central was just joining messengers on a Friday evening, and at that time they were using the Jon Snow on Broadwick Street, it was also the starting point of a lot of the alleycats at the time.
