how often do you have to inflate tubeless tyres to maintain pressure?

No more than Latex inners or tubs.

The more you ride them the better they get at keeping air in em', curiously.

Definetly less inflation required than latex tubes. I've had mountain bike tyres that have only dropped a few psi in weeks.
