You mean the grease suddenly began to exit by the axle some time after you'd finished regreasing?
I'd guess that the old grease was bunged-up (cold weather?) and wasn't all forced out initially.
When it warmed-up or was loosened by the pressure of the new grease, it was then forced out.

Sorry I probably need to explain this better, after I regreased the pedals and get the old grease out and clean the residue from both pedal. However, when I take the bike out for a spin and I discover that my right pedal grease slowly oozes out a considerable amount and after about a couple of ride the pedal on the axle becomes spiny again due to the lack of grease.
