Would using it once or twice a week sufficient to keep it running smoothly? it is a good point, leaving it alone for too long can cause issues.

I can't state it won't be ok, but at mileages you are quoting, battery probably won't retain charge well. Also exhaust system prone to rust if vehicle not run to temperature frequently as water will not evaporate. However a Toyota could well be your best bet even though Aygo is joint PSA project, which you probably know. I may be visiting the factory in a months time #CSB etc. These other suggestions to hire should be seriously considered unless entirely impractical, cost must be less, reduced hassle and kinder to the enviro...?

Not running a car for long periods is not good grounds for making it an emergency back up. It should still be maintained regularly and put battery on trickle charge.
