Using thin sliced pancetta, so that the bacon crisps up without overcooking the oysters.

Also, thin sliced pancetta in general. Takes about 1 minute to grill, and doesn't suffer from being water soaked crap.

Bacon has to be dry cured or its horrible.

Wiltshire cured (injected with salt water) is an abomination
