  • Smoked, Grilled on the George foreman. Minimum effort, can be turned off and left for ages and it will gently melt away the fat. Chop off most of what's left. Mmm

    Using thin sliced pancetta, so that the bacon crisps up without overcooking the oysters.

    Also, thin sliced pancetta in general. Takes about 1 minute to grill, and doesn't suffer from being water soaked crap.

  • This forums gone upmarket eh? Pancetta and oysters in the same post? And to drink? There are actually fossilised oyster shells in the soil of the Chablis region so it’s maybe not too fanciful to say that’s why it hits just exactly the right note. I’d pick a recent vintage though rather than a mature one, a premier cru if you’re treating yourself to natives.

    I think lardons are an acceptable bacon substitute but pancetta is far too upmarket

    The tesco knock offs are nicer.
