We had deep fried bacon rosettes served with waffles in California last year. Was truly astonishing. In fact I'm fairly sure it's the only way they know how to cook it over there.
At home it's grilled with the fat trimmed. If I do it in the pan I make a point of chucking the bread in for the last few minutes to soak up the goodness and toast it a bit.
