Actually ended up doing almost that. Honey and water instead of apple juice and some balsamic vinegar, garlic, cinnamon, star anise and ginger in the stock as well.
Sitting in the slow cooker for 10 hours currently.
The butcher had whole pigs heads for £2. Very tempted to have a go at this soon.
