I'd advise going to a bike shop and test ride them (any CX bikes) and see if a large/56cm felt right.

I'm sure you can ride anything from 54-58 and be happy, but since you are used to 56, then go ahead on that size.

The 58 is surely too large for me, I tried a caadx with 57 top tube with a 80mm stem and I felt very long :(

Uhh with a 80mm stem and feeling too long, then you are probably onto 54 with 80mm-100mm stem.
If you plan on doing cyclocross races, then your lower back would enjoy a super short setup. On asphalt bikes I race 56 frames and 130mm stem, but in cx racing I'm doing 54 toptube with 70mm stem.

No ahah cyclocross races are not for me, I will use a cx for everything, an all-road bike

Personally, I'd go for the same size @ShadeBoyy, my Surly was a 56 and so is my Focus... I had to shorten the stem on the CX bike cause the stem was longer, but that's about it

Even with a 0.8cm longer chainstay on the Cube 56, the Cube has a 2.7cm shorter wheelbase. #weightdistributiontothefront

It's more Pro (difficult/less forgiving) - but can be remedied by shorter stem, setback seat post if needed.
But I am sure you can find many different opinions on how weight distribution relates to CX handling.

Can anyone tell me what the best 'around a grand' 1 x 11, hydraulic braked, tubeless ready cross bike at the moment is?
Lighter is better.
I will have a cyclescheme voucher burning a hole in my pocket soon and my current cross bike is heavily roadified with fat tubeless tyres, mudguards, rack etc. By the time i've got it off road ready it's dark.

That Pickenflick is a silly price.
If you're planning on racing the XLS is probably the better bike (though I have heard complaints about mud building up on a shelf behind the BB), for everything else, the Pickenflick.

Novatec laced to Kinlin XR22T wouldn't come in much more than that if you can build them yourself?
