We're in gower in the whales. About a hundred mussels in cream and white wine for a tenner. Best I've ever had. 3 squidz a pint. Apparently I was spawned somewhere around here, fact fans.

Im really missing the home in terms of getting good meat at reasonable prices, you can get cheap meat here but its most likely been pumped full of hormones and shite, scandle here about piggies been given asthma drugs coz steroids yeah, other meat is expensive and frozen for import :(

Homemade hakata noodles tonight.
Here after 30 mins:
Two different tares that I'm gonna mix when they get close to being finished; one is pork short rib, trotters, shiitake mushrooms, caramelised onions and garlic, the other is roasted chicken carcasses, sake, mirin and kombu water.
So here we are after 6 hours.
Probably 2 more hours to go.

Let me know how this works out. Tried a ton of ramen, including a burnt one today. It was the fucking bollocks, super intense flavour and the burnt taste really added something. Spent the day walking round Nishiki market eating stuff and then went and picked my new knife up. Just finished our kaiseki meal, so off to get smashed on Sake :)
