Really like that wheel/tyre combo, wanted to do similar on the Grade but not enough space apparently...
Anyway, 11 speed - My understanding (and I could be wrong) is that an 11 speed XT MTB cassette will fit on a 10 speed freehub. Obviously that then opens up the opportunity to go for a bigger cassette and run 1x11. If that doesn't work, you also have the option of swapping to an XD driver and running a Sram cassette which will give you (potentially) a bigger range of gears.
I've been running 1x11 on my 5800 105 set up for about 700 miles now and its mint (admittedly with a 12/28 rear block). As for 5800 vs 5700 - i'd go 5800 every day of the week. It's miles better than 5700, in fact its miles better than the old 10 speed DA stuff I had.
