Very good point - this will be for bridleways and road, mainly. I have a Pasela on the front in 28 or 32 mm at the mo, perhaps it's best to get a matching one for the rear...

The XM isn't Vittoria's full on mud tyre, that's the XL. I'd say the XM is a decent all rounder, it's okay in mud but the tread isn't so raised, soft and squirmy that riding it on anything other than deep mud makes you feel like you're riding on ice.

How muddy are you going to go? That tyre is great for full on mud, not so great for other conditions!
Something like this is a decent all round tyre that won't break the bank. This is the rigid version so not super light but it's cheap and does me well for days when I don't want to risk wrecking my race tyres and I'm just riding around.
