Yes, always the entire bevel on chisels. and only sharpen from the bevel side, never the other side.

On the Lansky system. I bought one of these and tried it. Granted, you can get your knives fairly sharpish with it but I find it an incredibly unsatisfying, fiddly faff to use which just isn't pleasant. It's quite difficult to get it to grip/hold the knife blade soundly enough which can give rise to inconsistencies in the grind angle. Also, due to it's design you can't get super fine angles on the edge of a small blade (like an Opinel pocket knife) as the clamps clash with the stones.
I much prefer standard honing and whetstones which do take practice but they are so much more satisfying to use, you feel much more in touch with work.
Anyway, just my 2 cents. -

You could go for the Pingo or the Squeak, both by Spyderco and equally as good knives, just different blade shapes.

Are you sure the Spyderco is UK legal? It may be non-locking, but I think if it can be opened one-handed or has features on the blade to enable one-handed opening (the Spyderco hole being such a feature) it may not be legal for EDC.

I think I'll just persevere with the water stones then.
On a chisel/chisel knife, should I have the entire bevelled face on the stone or should the sharpened bit actually be a bit steeper than the rest of that face?
I've not been sharpening the whole face on my chisels but I wonder if changing and doing so would see me digging into the stone less and give me more consistent results.
