Tried the Nigella braised Asian short rib recipe and was bit sceptical of the 4 hour @ 150c cooking time even with a cartouche and lid on it. Lo and behold it boiled dry completely FFS.

Stuffed full.
The brined pork shoulder came out great. Massive fail with the crackling though.
Braised Spring greens and potato dauphinois came out lush.
Will do again and get the crackling right next time... -

Um! I love bircher, it's the thing I make for the big kid's lunchbox.
Made a really veg omlette/spanish tortilla thing last night, grilled the top instead of turning it...

Process? I always find it's such a faff and doesn't keep that well but I do enjoy it when it's good.

Agree, 150 is way too hot for 4hrs. I do 8 hours at 100 and tightly wrapped (double foil layer) for shortrib, comes out perfect.

• #24963

Good dinner spots in Stoke Newington? Feeling a traditional vibe, like O Cantinho but in Stokey. Otherwise anything that's a must-visit.
-
• #24970
Not sure what you mean by 'traditional', but RASA N16 is a must-visit. 55 SN Church Street, 7249 0344. You need to book on Saturday nights.

Thanks! But you're right, booking is essential, they're full until 10.30 p.m. Down on the list to visit some other time though, not had Keralan vegetarian since I was in the South West.

Bizarre video but in fairness I used to cook that all the time and it is superbly satisfying. None of that sliced sausage bollocks though. And also that pan only serves one (need a second pan for the 6 slices of accompanying fried bread), not four.
Then I look forward to the final photos in the set.
