  • Tried the Nigella braised Asian short rib recipe and was bit sceptical of the 4 hour @ 150c cooking time even with a cartouche and lid on it. Lo and behold it boiled dry completely FFS.

  • Agree, 150 is way too hot for 4hrs. I do 8 hours at 100 and tightly wrapped (double foil layer) for shortrib, comes out perfect.
