RS685 box just arrived. Would a fairly capable mechanic with zero disc experience be able to install ok with the right tools, or is it LBS territory?

If you're good at following instruction and have the right tool (I.e. Hose cutter).
Personally recommend a mechanic to do it so you can bring it back if there's a problem.

Sounds wise. Might have a read and see what the deal is. Could always give it a go and pay LBS to solve any problems. Probably the same or less than getting them to do it all but at least I'll have a better idea of the process

I did it for first time, its piss easy. All working fine 300 miles on. I bought and borrowed tools. Get the tektro hose cutter, nifty little tool that pushes pins in hoses too. Shimano bleed kit obviously.

There is one on youtube, guy with santa cruz stigmata and one by CRC, watch both .. the rest is just bleeding logic, you want to get all the air out of the system and not contaminate pads and rotors. For a first time installer (if followed instructions) its easier than setting up rim brakes properly.

If you have Juin Tech R1s on your bike make sure that you clean them regularly. Pistons got sticky on mine after just 6 months. Will have to replace them this weekend.

What are the hubs to use for discs at 105 / Tiagra level? I can't find anything below Ultegra.
Also, any great advantages / disadvantages to centre-lock hubs over 6-bolt?

You'll have to go for Deore or SLX. Although why do you specifically want Shimano? I'd go for something with cartridge bearings on disc wheels.
No real-world differences between centrelock and 6-bolt IMO.

Not crazy about cartridge bearings, for no more logical reason than I'm a bit of a retrogrouch, and I've heard they're not so great at load bearing, and this is for a touring bike. Why cartridges for disc specifically?

Just less maintenance when you're flying through dirt and water regularly, no damage to the hub when you inevitably ignore that little crunching sound...
Maybe for a touring bike it makes sense to have something serviceable anywhere, so loose balls might be better. In that case, I think the CX 75 is shimano's only 'road specific' offering, other than that it's Deore or SLX as I said.

Anyone advise on rotor choice for a Caad10 disc build please that is long overdue building up?
Brakes are Shimano RS685/785 - I was thinking 140mm RT99 (freeza) F&R

Having issues aligning a trp hy/rd caliper... rubbing no matter what I do! Having had a closer look it looks a combination of the pads not having worn equally and everytime I apply the brake it unequally 'centres' the pads. Any tips? Replace pads?

Two thing; align the calipers, and check the rotor if it's true.
Put your phone behind the calipers so you can clearly see how much gap there is on both side of the pads, also allow you to see if it's out of true or not.

Steel yourselves for a daft question - can you use Shimano Rotors with Sram calipers? Specifically I want to use Shimano Ice Tech rotors with SRAM Force CX1 group.
