Always loved those bikes. My brother used to ride for the Belgian Muddy Fox Team mid nineties and rode a Monarch Ultra for a year. Was a stunning bike.

I have qr alfine dynamo hub with a pelago front rack and it's not the end of the world. Never felt any problems with it but tbh it doesn't fill me with hella confidence.

Moved house recently and have tripled my commuting distance and for some reason I keep getting pins and needles in my left hand.
Does anyone know why this is happening? Is it just I need to throw on some grips?? And maybe raise the stem a bit?
Also anyone have any recommendations on comfy saddles and good value bright lights?

I'd say try grips and higher stem first, and if that's no go throw some drop bars or bullhorns on so that you can switch hand positions more often. Also try some gloves with padding to see if that makes a difference.
I get numb hands quite quickly when riding anything longer than an hour. Without drop bars it kills me after 20 mins. Gloves actually perpetuate it (Carpal tunnel compression? ), so I make sure to shake out my hands quite a bit more often, try to use my core a bit more and switch positions very regularly from hoods to top bar to drops and back etc.

It simply could be that you got a little too much weight on your hand, which may be cause by the saddle slightly too forward.
Pretty common on frame with steep seat angle.
