650b would be lovely, but I'll just stick with 700c as it'll be much cheaper;)

650b is cheaper than you think, any MTB 27.5 wheelset will work with it (providing it can accept the Shimano 11 speed cassette).

I think Im going to go 700 still,

Have no clue on what to go for. Still thinking CX is the way to go.
