I am assuming I don't need bike stem specific M5 bolts?
Most stems use fairly weak grade steel screws, for which A2-70 or A4-70 stainless is an acceptable substitute. I would caution that using stainless screws in aluminium components solves the screw corrosion problem by turning it into a component corrosion problem, particularly in salty environments like marine/coastal or sweaty.

My 2 bolt shoes suck up water from the ground in winter, it comes through from the cleat holes in the sole. It appears the Time Atac cleats wick fluid up from underneath. Would a waterproof tape applied inside the shoe stop this? If so what tap should I buy?

older style MTB triples ,basically where there is no shaft connecting the two crank arms
they can fit a road bike eh? with the appropriate BB - ISIS, octa, square t etc etc
i'm finding newer road Triples to be expensive (or cheap but heavy)
my bikes all running 9 speed (or less) would mean road STI would shift the ratio correctly on the front mech for shimano. -

The chainline isn't that different, use the same length BB.
Shimano 9sp MTB FD and Shimano 9sp road FD should move the same horizontal distance per click.

Have a look at Outdoor Research, E Case, Aquapac and Exped all make decent waterproof soft cases in many sizes with a variety of closure systems.
