Is deleting 111GB of music going to speed up a 2011 Macbook Pro running OS 10.10.15?

Once I've deleted the music I plan to update the OS.

Hard drives start getting seriously slow after about 5 years of regular use.

Get a new hard drive.

You can replace hard drives on 2011 macbooks, right?
