Find out how much it is to get a new 11 speed front and rear derailleur and shifters instead.

Then use Shimano 11 speed cassette and KMC chains.

Beside that, fulcrum have disc wheels with Campagnolo freehubs I think, ditto Mavic.

I had a look at the Fulcrum wheels, but they're either the low end ones, or £800+

Currently, I've found Zipp 30's with Campy free hub for £600 which seems a good middle ground.

I wouldn't worry too much about weight, it's mainly the tyres and tube that make the biggest difference, the cheap Fulcrum are generally reliable and give you some left over for some nice tyres and tube.

Other option is the Ksyrium Elite Disc if you really want to keep a reasonable weight.
