I just did this the other week, headed east from winchester and camping along the way. was fantastic and there are so many good places to refuel, in particular:
http://www.sustainability-centre.org/camping.html bit close to the start but nice campsite and has a great cafe
http://www.thesussexproducecompany.co.uk/ does a great breakfast/lunch and has good flapjacks etc.
saddlescombe farm, hikers rest is good too!
did it fully loaded running 1 X 8 and was plenty doable. would be great on a cyclocross bike!
