Columbus mud disc fork arrived for a new project. Thought ordering without paint would be fine but I'm worried it might suffer water damage or chips to the bare carbon. Should I spray on some clearcoat before riding it?

Water doesn't damage carbon .. It's UV or when you break the fibers that a setup for failure is introduced.
You need to use a UV resistant clear coat .. or use a specific carbon polish / wax which has a UV protection additive
