All Shimano 8/9/10 speed will work on 8 speed systems.
You could get a 105 5700 RD for cheap on eBay.
Or this new Shimano Sora RD 3500 9 speed for £14.84 delivered:
http://www.wiggle.co.uk/shimano-sora-9-speed-rear-derailleur-1/8 speed parts are quite affordable so you could push the boat out and get a new cassette and chain while you are at it - they are about £20 for the pair on CRC/Wiggle and it saves you cleaning the current ones ;-)

5700 doesn't work with 8 speed shifters, only the earlier 5600/6600/7800 10 speed stuff does.

Shimano themselves say it is compatible so I just repeated :-(
*Top Features of the Shimano 105 RD-5701 Rear Derailleur - Short Cage
•Large 11 tooth pulleys increase service life and reduce noise•Super light shift action
•Compatible with 8, 9, and 10-speed drivetrains
•Maximum low sprocket 30T
•Maximum front difference 16T, total capacity 34T
•Average weight 221 grams*http://www.wiggle.co.uk/shimano-105-rd-5701-rear-derailleur/
Also, IIRC, there is an alternative cable routing trick that can be used.
Paging @mdcc_tester for Shimano RD intercompatibility plz

Shimano Claris is their standard 8 speed groupset now. Nowt wrong with it either.

It will work fine. 11-speed ones (5800) are incompatible.
I've probably got a spare 600 Tricolore RD, if that's something that would suit you. Definitely better quality than new cheapo stuff ;-).

.
Has anyone got an 8 speed Shimano rear mech (that will work with indexed shifters) they don't want?
Mine snapped in two after a mere two years and I need to get the bike mobile again.
