You might, but it's not worth it when chainring bolt spacers do the job and can be had in various increments.
Shimano road hubs (before they went all weird with fat axles) usually had a ~5mm spacer between the NDS cone and locknut, making them a doddle to convert to 120mm OLN without messing with the dish.
Just registered to say: thanks for this discussion/advice on the HED disc track conversion. A month or two ago I was trying to find info to do the same to one I picked up at a swap, and it was nearly impossible to find decent, comprehensive guidance on what I might need to make it happen.
I'm curious about the rear spacing issue Rik mentions as well. My instinct is that you might be able to just chop down the spacers with a pipe cutter (if one is not picky about things being perfect).
