I did some touring in Spain last summer, my route was Zaragoza-> Valencia -> Alicante -> Granada -> Malaga. What I did was staying in hostels in the cities and wildcamping inbetween the cities. My experience is that if you're away from the touristic places it's really easy to find nice places to go wildcamping. It's not legal but people don't really care and are really friendly. If you follow the coast there will be campsites along the way (not cheap though).
