Squeezing a caliper will just loosen the other one won't it? As it frees up cable. not tightens it. I think you'd need to ride around with it squeezed and let it go when you want to apply the brakes.
Sounds safe and cool either way.
You're right. It would be a dead mans switch and therefore really safe.
If my wife lost consciousness at all while riding, the bike would safely come to a stop.
