I also live in Ghent, in laws live in Bruges so I do the route via the canal frequently. As said, it's boring but will get the job done. Here's a link to the gpx in reverse direction.
The Fietsnet option is cool if you have time and the weather is nice. Routing is straightforward and is good-ish throughout Belgium. The more scenic routes and towns all go south of the E40. The sings used look like this:
