I heard Bulldog Edition have stopped doing coffee shots and got a batch brewer. Might go back then! The few I tried were dreadful. Went to Ben Kaminsky's class/tasting about them and at best they tasted sweet with a big mouthfeel, but had lost all the acidity resulting in a real unbalanced flatness.
It's a shame because it felt like that was just a starting point, but from what I've heard people just couldn't get them consistent on the bar.

Thanks for this, its reassuring that your description of the coffee shots from Kaminsky is exactly what i found. I thought there was more complexity to come if i could get up to tbat 24% extraction, but maybe not. I don't think i'll persue this any further - the whole process and the resultant drink also looks so unappealing.
Batch brewing is so good with machines like the Marco Jet now. Add in the queue-busting service speed and fool proof operation and its a no brainer really.

It was me! Yeah, as far as I know Bulldog are on batch brews now. I had some absolutely killer coffee shots, but like you said the consistency wasn't there. It defo suited some coffees more than others. We found that everything just kind of ended up tasting the same. Like a coffee shot. We had them on bar as it was supposed to produce a more consistent result than hand brewing, but I think it would have taken much more fiddling about to get good results, and a well dialled batch brew is a preferable method to hit consistently tasty brews quickly!

For French press use a ration of 1 litre of water to 75g of coffee (James Hoffman's ratios but tbh I've used a smaller ratio with good results as well.)
Pour on water and leave overnight or about 12 hours. Then put the plunger in the press but don't push it down. Just leave it at the top and gently pour the coffee through the plunger filter. This will disturb the coffee less and mean that you get a cleaner cup. -

Dom, I'm all excited about cold-brew, I've been experimenting with it all week as our lot are going to start producing nitrogen draught cold brew.
Use nice bright acidic coffee at pour-over filter grind
Go for full immersion brewing - just any vessel to soak ground coffee in water.
4:1 brew ratio - 250g/l
Brew 24 to 48 hours. It doesn't really over extract, 48 hours gets heavier but less complex.
Pour through a flour sieve into a paper filter
Dilute 1:1 for cold brew, or 0.75:1 water:concentrate if gassing it.This gives you quite a strong tasting drink but serving with ice knocks loads of flavour out of it so you need a strong brew.
If you can get your hands on one of those cream whippers that take the NO2 cartridges you can gas it up in there to get the Guinness type cascade and body.
This stuff is super caffeinated, I get a buzz after drinking 150ml of this stuff so go careful. I made myself feel a bit peculiar a couple of times.

I have one of those ^ also ( from a previous recommendation by Sumo). They are good but I find I get through a lot of coffee when using it. A French press is better for smaller servings.

What's the best bang 4 buck pour over/filters I can get?
I've got one I found is clas ohlsen which has 3 holes in the bottom but the flow is really slow even with coarse grins can't get a 500ml anywhere near 3 mins never mind 2:30...
