Make sure you don't use too long a bolt, there's nothing stopping you screwing straight through the seat tube

The wheels werent cheap so feel inclined to stick with them. The lack of chainstay bridge on my Walvale did make me think lovely steel guards wouldn't work, but in hindsight seen a few problem solvers that might do the trick.

Questions.
What frame bag do people recommend for the main triangle, not too big.
Is my rear rack too high?I think it's meant for 700C
What tyres should I buy, 26" mainly road and gravel, very little worse that rocky fire trails.
Can I run these wheels tubeless? They are Shimano XT mtb wheels.

Wheel look old, doubt it.
Rack look fine.
panaracer a popular choice.
Ant frame bag that fit with the length, proper one, not those heavy tiny one on that bike.

Both front and rear racks will be more stable when they are lower / closer to the ground. This is easily done on the front by cutting the rack legs down but you'll need a 26" specific rack on the rear for an ideal setup

Will look at cutting down the legs on the Wald. Rear rack sounds about right being non 26" specific.
Will check out the tyres and frame bag.
I absolutely love riding this bike. It's just fun!

Ghetto tubeless is worth a try, I have it set up on Mavic XM317 rims and they're hardly a modern design.
