Good to see Everton actually looking for an up and coming manager rather than a geriatric retread...
Sevilla's domination of the Europa league would bode well for Everton if they do appoint unai emery as he's shown he can produce teams that can win stuff when given the players and the time. And his time at Valencia was pretty good too under tough financial pressures.
Also think if he does well, it'll cause a rethink of how la Liga is perceived in the uk. If a coach who couldn't win the league with two different clubs in Spain, can come to the uk and turn Everton into proper title contenders. Then it'll show how tough a league la Liga is to compete in, when the top two clubs cream off the majority of the money and talent..
Also another nail in the young English/British coach coffin...

Unai Emery only works with directors of football - so they'd need to bring someone in to fulfill that role becuase their transfer history is pretty hit and miss. He's also worked for selling clubs.
