Dom, I'm all excited about cold-brew, I've been experimenting with it all week as our lot are going to start producing nitrogen draught cold brew.
Use nice bright acidic coffee at pour-over filter grind
Go for full immersion brewing - just any vessel to soak ground coffee in water.
4:1 brew ratio - 250g/l
Brew 24 to 48 hours. It doesn't really over extract, 48 hours gets heavier but less complex.
Pour through a flour sieve into a paper filter
Dilute 1:1 for cold brew, or 0.75:1 water:concentrate if gassing it.This gives you quite a strong tasting drink but serving with ice knocks loads of flavour out of it so you need a strong brew.
If you can get your hands on one of those cream whippers that take the NO2 cartridges you can gas it up in there to get the Guinness type cascade and body.
This stuff is super caffeinated, I get a buzz after drinking 150ml of this stuff so go careful. I made myself feel a bit peculiar a couple of times.
I had a bottle of this whilst in Athens a couple weeks back, it was fantastic.
