After punching a tree on my last ride, I've gone back to a relatively narrow 750mm bar :-)
Tubeless has been nice so far. On the wide rims, I'm happily running 28psi rear and 23psi front, and that's at 115kg. I don't ride aggressively or through rocky terrain though, so there's no immediate danger of rim strikes.
To be fair a Superstar Yardstick at 915mm, if we're talking keeping things in proportion to the rider, would be the only thing you should consider wide.
So in that case I need to cut my 780mm down to 700mm.

I've gone for a soft tail instead...
