Interesting read, thanks.
Drop bars means hydraulic 10 speed shifters, which means £££, which means months before I can finish the build. So no chance for the time being. I'm also planning on doing nothing other than commuting on it this year so I don't think it's a sacrifice. Next summer I can see it setup with drops & alfine though

Ah in that case do it, if you're set on hydraulic brakes. Shame there isn't more options available for that scenario.

Bars are actually very sensible, they give you a ton of hand options, like Jones loop bars.

Worried they're made from butter though. I've got some 130bcd sugino cranks on the beater I'm splitting to fund the build. Struggling to find a 130bcd narrow-wide ring. Could go down the chain guard route but would rather avoid it and don't want to spend my life sorting out dropped chains.

I think I'll be pretty lucky to get anything like that cheaply and soon. Might just got for the butter cranks if I haven't found anything by next week. Sure they'll survive long enough to get something decent second hand

Could work, depending on your chainline and the chain stays. Think of it like a fixed or singlespeed crankset.

Soma recommend you don't use 650b on the wolverine http://somafab.blogspot.co.uk/2015/11/guide-to-650b-conversions-on-soma-frames.html?m=1 you may well have less clearance because of the chainstay curve.
Also go for drop bars!
