From what I can figure out they are more worried about tubeless tyres blowing off the rim than the rim tearing apart (I absolutely get your point about the risks of inflating a tyre past what a rim can withstand). Stans have told various people (not just James) that they can run road pressures with tubes and I've googled and only found one instance of a Crest snapping and that was on a MTB.
However, I can't say I'm totally reassured and one definite downside of the Crests is you can't use them for road tubeless, which means they aren't very future proof for a bike that'll mainly be a road bike. So a heavier rim is looking like a good idea.
