I'm also a bit below 1,80 and everything between 55-57 works just fine for me. As long as the toptube is a little bit shorter than the seat tube. But I thought for 187cm something 57,58,59ish would be more adequate. Of course, there are many other factors such as the relation between the length of your legs and your upper body. But according to the rule of thumb, I thought 56 was a little too small for 1,87 or am I totally wrong? I'm genuinely interested!
P.s. I have one 54 frame and for my legs to be straight at the lowest point of the pedal, I have to adjust the seatpost to the highest possible point and the seatpost is not particularly short.

56 is ok for 187cm. I am a bit below 180 and 56 is a bit too big, but just a bit.
