Is that definitely true?
Not 100% sure, I'm just going off of what I read online (from various sources, some more reputable than others).
I'm going to tour on my own, so have to bring all the gear (tent, sleeping bag, cooking equipment, etc, etc), so I'm aiming for at least a 1:1 ratio for my lowest gear. But I don't know anything about touring/climbing fully packed, so I'm not sure.
I just find it a little odd I have to jump trough some hoops (change rear derailleur, cassette while taking into account max capacity due to the chainrings) in order to achieve low gears. Maybe I should look into MTB chainsets after all, like @macaroon suggested. But can I use brifters in combination with those? I feel like I'm missing something, knowledge first and foremost.

I'm currently looking at a nice second hand Ultegra 6700 triple groupset, but it has a 52 chainring. This means I can't use a 11-30 cassette right? Because of the capacity. What's the point of a triple if I can't even get a 1:1 ratio?
If I'm correct I can fit a 11-28 cassette max, but I'm wondering if that will be enough (not sure what terrain I'll be doing, but I don't want to be under geared).
