Deleting files on most OSs just involve deleting the links to the files - the data still exists on the drive, but the pointer to that piece of data no longer exists.
If you haven't used the phone extensively, it's possible that the data still exists.
You can "buy" some recovery software (Zero Assumption Recovery is my favourite), and plug your phone / scdard into another machine to run it.
