I have been trying really hard to not buy a mountain bike but damn it you are not making this easy

Yeah well - one of the wife's colleagues gave me his old Shimano MTB disc brake system after he upgraded.

I now have brakes. That's most of a bike, so logically I need just one or two other things and hey! Mountain bike!
