Metal mudguards is somewhat form over function on a tourer, heavier and you really want a safety clip so you don't go over the bars if something gets jammed.
A double also isn't as suitable as a triple loaded. But I wouldn't call it anti either its just a little prettiness over function :)
Doubles/compacts are fine for touring with a 36t cassette, if I can manage the mountains in the Balkans on that configuration then nobody should have an issue.
Good on you, but I need the 32F*32R on mine loaded in the Scotland hills...
...of course it's not impossible and Audax bikes tend to have doubles rather than triples. Just wouldn't be my first choice.
