Just start a thread, there's nothing stopping you. You can bet that lots of non-vegans will be interested in it, too--people interested in nutrition, basically, which may not include certain people who post a lot on this thread. A lot of athletes are interested in following a vegan diet even if they haven't taken on board the ethical case. (By contrast, while I'm very interested in vegan food, I'm not that interested in nutrition in general or even vegan nutrition.)
Put link to good resources/references in the OP, e.g. 'Plant-based Nutrition and Health' by Stephen Walsh.
I'm sure more good riding food recipes will keep people coming back to it. :)
