  • I did tuna steaks marinated in lime and coriander last night. They were quite nice.

    But the mango salsa that I made to go with them was knockout.

    Small-dice mango, red pepper, red onion, red chilli and add a shit load of chopped coriander and the juice of a lime. Leave for 10 minutes.

    Really delicious and fantastic colours.

    I deep fried some cornflour coated cooked noodles to add some crunch. OK, but next time I'll deep fry in chilli oil.

  • Love mango salsa. Regular find in Pacific Mexico cooking well before Ainsley.

    We've been doing a few things with Pomegranate salsa - pomegranate syrup, red onion, parsley, olive oil and vinegar. Very tasty with lamb and with bread & hummus.
