Love mango salsa. Regular find in Pacific Mexico cooking well before Ainsley.
We've been doing a few things with Pomegranate salsa - pomegranate syrup, red onion, parsley, olive oil and vinegar. Very tasty with lamb and with bread & hummus.

In Mumbai working for four days what are the local dishes I should be looking to savour? Gonna be working for most of it but may have an evening free...
Also straight after I've got four days in Shanghai, so hit me up with the local delights/dumplings... -

bruh ..
I know limited time but any of the following depending on your location. All of these are in 15km circle, all cab-able.
- Britannia cafe (sali boti and berry pulao, a Bombay institution and a MUST also only open for lunch)
- Badey miyan kebab house (Behind the swanky Taj hotel)
- Haji ali juice center (late night dessert)
- Pao Bhaji and Bhel on Chowpati (street food)
- Shivsagar (south indian veggie)
- Sindhu durg and/or Gomantak in Dadar (best fish restaurants in Mumbai)
More to follow..
Open the cab door with left hand.

As far as Shanghai goes, Shengjianbao is what you want. They're the fried, soup filled dumplings.
Yang's Dumplings is a chain and does a pretty faultless (IMO) version.
There's a few of those around - search on Bing or Apple Maps. Google is not your friend in China.
I'll ask some mates for more tips.

Any suggestions for decent restaurants in Brighton? No strong preference for type of food.

I am looking forward to making this tomorrow. Rice with pandan leaf too. Yum!

Enjoying Flank which, from Sunday is at The Cow on Seven Dials (having previously been on Preston Street). The chef, Tom, used to run the kitchen at The New Club which is also not bad.
64 Degrees is very nice but not so easy to get a table at short notice.
Silo is fantastic and right in the centre of the lanes.
Curry Leaf Cafe is great south Indian street food.
Chill Pickle by the library is probably the best Indian food I've had outside of India.
Everyone rates Riddle & Finns for seafood but I've been there 3 times and have been extremely sick afterwards on two of those.
There's also Brighton's best kept secret Bincho Yakitori which is basically where all the chefs go after work.
I did tuna steaks marinated in lime and coriander last night. They were quite nice.
But the mango salsa that I made to go with them was knockout.
Small-dice mango, red pepper, red onion, red chilli and add a shit load of chopped coriander and the juice of a lime. Leave for 10 minutes.
Really delicious and fantastic colours.
I deep fried some cornflour coated cooked noodles to add some crunch. OK, but next time I'll deep fry in chilli oil.
