I did tuna steaks marinated in lime and coriander last night. They were quite nice.
But the mango salsa that I made to go with them was knockout.
Small-dice mango, red pepper, red onion, red chilli and add a shit load of chopped coriander and the juice of a lime. Leave for 10 minutes.
Really delicious and fantastic colours.
I deep fried some cornflour coated cooked noodles to add some crunch. OK, but next time I'll deep fry in chilli oil.

Love mango salsa. Regular find in Pacific Mexico cooking well before Ainsley.
We've been doing a few things with Pomegranate salsa - pomegranate syrup, red onion, parsley, olive oil and vinegar. Very tasty with lamb and with bread & hummus.
