Yes you can get an SP PL-8 dynamo hub with centerlock, I think @CarlosBI can tell you more about it... he and Jesse used them in last year TransAM and came 1st and 2nd

SP has a PL-8 model that costs half the SON centerlock version
I used SP dynamo PV-8 (for brakes rims) on TransAm (2nd) but Jesse Carlsson (1st) used also Shutter Precision SV-8 version (with less resistance 2,4W power output).I also sell them, I’ll send you a private message with price and estimate delivery if you want

I can't help you with Di2/Hydro, but when I'm in doubt of what parts come in certain product... Bike-Components have the best photos always... they take everything out of the box and give you the best info
Although they are based in Germany, some prices are good.
Flat mount and Post Mount make no difference when choosing a disc brake rotor. Just how the caliper is attached to the frame/fork (and where the pads engage the disc). You need the correct adapter for 140mm or 160mm.
If you're gonna get Shimano Hydro, the Shimano Freeza Rotors should be awesome (but your hubs must be centerlock!!)
The only rotors similar to the Shimano Freeza that I've found are the Reverse Aircon
