Colleague of mine that is a pretty serieus cross rider told me to not even consider v-brakes. Guess I'll just drill the fork.

I found out I could get a SRAM Rival 1 group for a pretty good price at my work, so I'm probably going for that in the end.

Small update:
Finally sanded all of the paint off and going for a finer grain to 'polish' the frame now.
Also got some Avid Shorty 6's for speed control. -

So I found a Centaur groupset that is going to be placeholder on this bike, and will be moved to my steel Gazelle after I get a Rival or Force 1x group.
Was quite ok in terms of price, however, the seller didn't say it was a veloce crankset and he did remove a lot of stuff (no ergopower rubbers, no brakepads).
Did get a Ksyrium wheelset as well though.
Sent him a message to try to sort this out, but anyways, here it is:
