go with triton, I picked something up from there once and had a lovely chat with them, seemed like very nice people. If you call them up you could go pick it up in person and have it for the weekend - it's on the end of the central line

Could be a weak return spring on the derailleur, had this on a new ultegra derailleur took me a very long time to figure it out. After new hanger, cables etc etc.

Handlebar width is personal - start short and gradually make them wider until you feel comfortable. -
