I have just made dark chocolate / hazelnut spread as I love nutella but am aware it's full of filth.
Given it's just blended nuts, cocoa, melted dark choc and a very small amount of honey, how long do you reckon it will last in an airtight pot in the fridge? There's no oils or milk / cream in it so like to think it will have a few weeks? Not that I see it lasting very long...

You won't have to worry about it going bad before going empty, unless it's a massive batch.

Great. It's probably about two weeks' worth at a guess. As I said there's not really anything in it that would go bad but wasn't sure about the hazelnut oils... Then again most shop bought nut butters last forever

Today I threw out an empty jar of Nutella that I bought for the girl last Christmas (had her name on it, ahhhh) that she'd stashed at the back of the cupboard and I now realise had never been washed out. Not a spot of mould, scary.

Cooked this salad tonight. Was seriously big diamonds. Good for this time of year when everyone's trying to be healthy. The tamarind dressing is great and would be great with loads of things.

There's an amazing butcher in my street who gets his meat from a local farm. No chemicals etc. Great meat and he knows exactly how I like my cut of prime quality rib eye. -

Got a 990 gram rib eye. Sealed in a bag, gonna try to sous-vide cook it in a water bath in my oven. I know it won't be as precise as with a dedicated sous-vide circulator, but it's worth the try. Seasoned gracefully with good sea salt and freshly ground black pepper. Shame I don't have any fresh thyme on hand. Now it's 2 hours and 15 minutes before I will preheat my cast iron skillet on high heat for about 10 mins, add some oil and give that baby a good brown crust. While it's browning I will add a generous lump of butter, some roughly cut up shallots and a couple smashed cloves of garlic. I hope this will work out the way I want it to.
